The Mountain Project

When I think of comfort food, Stroganoff is definitely a recipe that comes to mind. This Russian dish turns game scraps into fall apart, delicious chunks of meat in a wonderfully savory, gravy-like sauce.

Antelope Stroganoff

Serves: 4      Cooking Time: 45 minutes

Ingredients
  • 1 lb. Game scraps [Could also be made with ground meat.]
  • 1.5 c. Beef broth
  • 1 c. (8 oz.) Sour cream
  • 8 oz. Sliced mushrooms
  • 1 Medium onion
  • 3 tbsp. Flour
  • 2 tbsp. Butter
  • 2 tbsp. Ketchup
  • 1 tbsp. Minced garlic
  • 1 tsp. Salt
  • 8 oz. (5 cups dry) Egg noodles *<-my preference* [You could also use 4 servings of rice, or cauliflower.]
Steps
Crockpot Version *my preference*:
  1. Dice onion
  2. Saute onion in butter and salt
  3. Once the onions look translucent, add garlic and mushrooms, saute until soft
  4. While onions/ Mushrooms saute, cut game scraps into small bite sized pieces
  5. Add sauteed onion/ garlic/ mushroom mixture, meat, broth (saving 1/3 c.), & ketchup to crock pot
  6. Cook either low for 8 hours or high for 4 hours
  7. 30 minutes prior to eating; Mix remaining 1/3 c. broth and flour into a separate bowl, whisk until smooth
  8. Stir flour mixture into crock pot
  9. When ready to eat, boil water for egg noodles, add noodles, cook to al dente [firm to the bite, but not crunchy], drain
  10. Add sour cream to crock pot, stir until completely mixed in
  11. Serve over egg noodles or rice
Stove Top Version:
  1. Cut game scraps into small bite sized pieces
  2. Dice onion
  3. Sauté onion
  4. Add meat, garlic, and butter to onion & cook until brown
  5. Add broth (saving 1/3 c.), ketchup, & salt to meat/ onion mixture
  6. Heat to boil, reduce to simmer, cover, simmer 15 minutes
  7. Start water boiling for egg noodles, add noodles, cook to al dente [firm to the bite, but not crunchy], drain
  8. Stir in mushrooms, cover, simmer 5 minutes
  9. Mix remaining 1/3 c. broth and flour into a separate bowl, whisk until smooth
  10. Stir in flour mixture to meat/ onion/ broth
  11. Boil for 1 minute to thicken, stirring constantly
  12. Add sour cream, stir until completely mixed in, heat thoroughly
  13. Serve over egg noodles or rice
